Our gin is carefully made using ingredients sourced from our garden, hand selected for the ultimate combination. We macerate the botanicals for up to a fortnight to make the perfect blend.

Once distilled, each batch is rested for up to 5 weeks before bottling it in batches of 25 bottles, this allows the flavours to fully infuse and gives our gin a truly exceptional taste.

It all began…

…with a love of gin and many months of experimenting with different flavours and botanicals, where the majority of which are grown in our garden.

Once we had the winning recipe we needed an exceptional bottle to match our exceptional gin. As we can see Mow Cop Castle from our house, the skyline was a major part of our inspiration for the name and the bottle design.

The gin is infused with a subtle blend of foraged botanicals, home-grown ingredients and in a gorgeous unique bottle it has become our original Castle Gin.

We think it’s about finding something you like, rather than being told how to have it.

When first tasting a gin we always like a little sip of the neat liquid (or just dip your finger in and taste it).

Castle Gin is best served with plain tonic and garnished with a slice of orange.

INGREDIENTS

50ml gin

Splash of fresh lemon juice

Tsp Honey

Lemon twist to garnish

 

HOW TO SERVE IT

In a cocktail shaker stir a generous teaspoon of honey with a splash of water at room temperature.

Mix until the honey dissolves.

Add the gin and lemon juice.

Fill with ice and shake.

Strain into a chilled Martini glass and garnish with a lemon twist.

Then enjoy the perfect bees knees!

Bramble

INGREDIENTS

50ml gin

12.5ml lemon juice

12.5ml sugar syrup

12.5ml Creme de Mur or Chambord

2 blackberries and a lemon slice to garnish

 

HOW TO SERVE IT

​Fill a cocktail shaker with ice​, add the lemon juice, sugar syrup and gin then shake for 10 seconds

​Now fill a rocks glass with crushed ice, strain the contents of the shaker over the crushed ice.

Finally drizzle the Creme de Mure or Chambord over the mixture then garnish with the blackberries and lemon.

Now enjoy!

Elderflower Collins

INGREDIENTS

50ml gin

20ml lemon juice

10ml sugar syrup

10ml elderflower cordial

​Soda or lemonade to finish depending on whether you prefer it sweet or sour

Sprig of rosemary to garnish

 

HOW TO SERVE IT

​Add ice​, gin, lemon juice, sugar syrup and a dash of elderflower cordial into a cocktail shaker, shake for 10 seconds.

​Pour over ice into a high ball glass, top with soda or lemonade and add the rosemary to garnish.

If you want it a little different top it with prosecco instead of soda/lemonade to make an Elderflower Royale.
